    C Butter,

  • softened

  • 3/4

    C Sugar

  • 1

    Egg

  • 1/2

    tsp Lemon Extract

  • 1

    tsp Lemon Rind

  • 1.3

    /4 C Sifted Flour

  • 3/4

    tsp Cream of Tartar

  • 3/4

    tsp Baking Soda

  • 1/4

    tsp Salt

  • 1

    C Golden Raisins

  • 1/2

    C Chopped Nuts,

  • Pecans or Walnuts

Directions

Bake 400ยบ. Heat oven. Sift together flour, cream of tartar, baking soda and salt; set aside. In large mixer bowl, mix butter and sugar until fluffly. Add egg, lemon extract and lemon rind. Add flour mixture, blend well. Mix in raisins & nuts. Roll batter into the size of a small walnut. Place 3" apart on ungreased cookie sheet. Flatten with a fork that has been dipped in flour, making a crisscross pattern. Bake 10-12 minutes or until light golden color. Cookies don't get brown. This recipe can be doubled. My family does not like raisins in their cookies. I increase the nuts to 1 cup.
