Ingredients

  • 1/4 c. Soft butter
  • 4 - 6 T Parsley chopped
  • 1 t. Crushed basil
  • 12 oz. Cream cheese, softened
  • Ground pepper
  • 2/3 c. + Boiling water
  • 8 oz. Fettucini (spinach is best....thus the "green")
  • 2 large cloves garlic, minced
  • 3/4 c. Shredded or grated parmesan cheese
  • Large pot of boiling salted water
  • Parsley for garnish

Preparation

Step 1

Using the food processor, with the steel blade mince the garlic. Remove from bowl and sauté in the 1/4 C Butter 1-2 minutes. Cook noodles in a large amount of boiling salted water until just tender; drain. Toss with the garlic and butter until well coated. Sprinkle with ½ c. Parmesan cheese; toss again to coat. In processor bowl with steel blade combine the chopped parsley and basil and add the cream cheese and pepper. Add the boiling water a little at a time until thinned a bit, process quickly or stir well. Pile the coated noodles on a warm serving platter; spoon the warm cheese sauce over and sprinkle with the remaining parmesan cheese. Garnish with parsley.
