Ingredients

  • Pepper Relish:
  • 1 c. low sodium soy
  • 1/4 c. Fresh chopped ginger
  • 4 big cloves garlic - minced
  • 2 juicy limes
  • 1/4 c. Honey
  • 4-6 skinless/boneless chicken breasts
  • 1/2 c. Red ball pepper – diced
  • 1 sm red onion chopped
  • 1-2 jalapenos seeds removed and chopped
  • 1 1/2 tbsp. Balsamic vinegar
  • 1 1/2 tbsp. Olive oil
  • Salt and fresh ground pepper
  • 1 tbsp. Fresh cilantro

Preparation

Step 1

Marinade – mix and marinate chicken at least 1 hour. Grill then before serving mix together ingredients for pepper relish and spoon over the top.
