Ingredients
- 4 Bonless Skinless chicken breasts butterflied and pounded to 1/4 inch
- 1 pkg. frozen chopped spinach thawed and squeezed of water
- 1/4 C fresh grated parm.
- 10 pitted calamata olives chopped
- zest of 1 lemon
- juice of 1 lemon
- 4 large slices prochuto
- S&P
- Cooked pasta
- Your favorite pasta sauce
- Kitchen twine

Step 1
Line each breast with a slice of prochuto
Combine the remaining ingredients in a bowl, spoon equal amounts onto each of the breasts and roll them up. Use 3 lengths of twine to secure each breast
Sear each breast on all sides in a cast iron skillet, move the skillet to a 350 oven and cook until chicken is cooked through about 20 minuts. 165 on an instant read. Allow to rest for 5 minutes
Serve over pasta and cover both chicken and pasta with the pasta sauce.
