Ingredients

    tbsp of olive oil

  • ¼

    cup rosemary

  • 6

    garlic cloves (12 total)

  • 3

    shallots

  • ½

    tbsp thyme

  • 2

    tsp black pepper

  • tsp salt

  • 5

    lb lamb leg

  • 3-4

    large carrots

  • 6-8

    red potatoes

  • 2

    onions

Directions

1. Combine first 7 ingredients (only 6 cloves of garlic) and spread over lamb leg 2. Roll up lamb leg and tie up with rope. Rope it completely on all sides 3. Add cut carrots, quartered onions, halved red potatoes, 6 garlic cloves, salt and pepper, olive oil 4. Place roast on top of vegetables, top roast with remaining marinade 5. Roast at 450 for 50-60 min, Let it rest for 20 min
