- 4 cups instant potato flakes
- 1 Tbsp. salt
- 10 Tbsp. olive oil
- 1 Litre water
- for 1/2 recipe

Preparation
Step 1
in a large bowl, mix together flour, potatoes and salt. using clean hands, mix in oil then water.
knead 10 times
break off pieces of dough and roll into 1/2 inch "snakes"
cut into 1 inch peices, roll on the back of a fork to make a groove in them
bring a large pot of water to a boil, add salt. cook gnocchi in batches.
when they float, they are done, do not over cook or they are gooey.
