Ingredients

  • 1/4 cup olive oil
  • 1 small onion, chopped
  • 1 clove garlic, crushed
  • 1 6 oz can tomato paste
  • 2 cups boiling water
  • 3 cups canned tomatoes
  • 1 cup red wine
  • 2 teaspoons salt
  • 1 teaspoon sugar
  • 1 1/2 teaspoons dried oregano
  • 1/2 teaspoon basil
  • 1/4 teaspoon pepper
  • few grains cayenne
  • dash worcestershire sauce

Preparation

Step 1

Heat oil in a heavy saucepan, cook onion and garlic until soft and lightly coloured.

Thin tomato paste with boiling water; add to pan along with tomatoes, paste, wine, salt, sugar, and seasonings.

Bring just to a boil; reduce heat and simmer, uncovered, at least 1 hour or until sauce has thickened. Stir frequently. If desired, put through sieve.
