Pork Parmesan

Ingredients
- 3 tablespoons fine dry breadcrumbs
- 3 tablespoons grated parmesan cheese
- 1 1/2 teaspoons oregano
- 1 egg white
- 4 medium 1/4" thick boneless pork cutlets
- 1 tablespoon butter
- 2 tablespoons vegetable oil
- 1 lemon, cut into wedges

Step 1
In plastic bag or shallow dish combine bread crumbs, parmesan cheese, oregano and pepper. In shallow bowl beat egg white until frothy. Dip pork into egg white to evenly coat. Add cutlet to seasoned breadcrumbs; toss to evenly coat. Remove cutlets.
In large skillet, heat butter and 1 T oil over medium-high heat until butter is melted. Add pork; cook, turning once until golden brown and cooked through, about 6 - 8 minutes. Add remaining 1 T oil to prevent sticking.
Serve with lemon wedges.
