PASTA CARBONARA

I learned to make this at one of Max’s cooking classes at La Cucina. It is a very quick way to make a pasta dinner and it tastes wonderful.

Ingredients

  • 4 Strips bacon, chopped
  • 1/2 Small onion, chopped (red onion is good for this)
  • 3 Eggs (in these days of salmonella, I use Egg Beaters)
  • 1/2 Cup grated Romano cheese
  • 4 Sprigs parsley, chopped
  • 1/2 Lb. spaghetti

Preparation

Step 1

Saute bacon and onion in small pan until bacon is brown and onion is translucent. Mix eggs, romano, parsley and some freshly ground pepper in small bowl (mixture should be thick). Cook spaghetti in boiling salted water until done. Strain, leaving a little water. Pour pasta into large serving bowl. Add bacon and onion and toss. Add egg mixture and parsley and toss well. Serve immediately.

Note: You can add heavy cream (about ¼ cup) to this recipe if you wish.
