White & Brown Rice Pilaf
Delicious rice pilaf that is made with brown and white rice that is seasoned with sautéed shallots and mushrooms. A perfect side dish!
- 2 tablespoons minced shallots
- 12 medium mushrooms, chopped
- 1/2 cup brown rice
- 3/4 cup white rice
- 2 1/2 cups chicken stock
- 4 tablespoons unsalted butter
- Kosher salt, to taste
- Freshly ground black pepper, to taste

Cooking time 60mins
Melt butter in pan over moderate heat. Stir in shallots, increase heat and saute. Add mushrooms and brown rice; cook until liquid is evaporated, about 10 minutes. Add chicken stock, bring to a boil, reduce heat to low and cook 10 minutes. Add white rice and cook, covered, for 20 minutes. Fluff rice with fork and let stand 15 minutes before serving. Add salt and pepper, to taste.
