Toasted Coconut Wafers

Ingredients

  • 1 cup butter
  • 1 1/4 cups sifted powdered sugar
  • 1/8 tsp salt
  • 1 egg yolk
  • 1/2 tsp almond or vanilla extract
  • 2 1/4 cups all purpose flour
  • 1 cup shredded coconut, toasted
  • 1 beaten egg white
  • 1 1/2 cups shredded coconut

Step 1

In a large bowl, beat butter with an electric mixer on med-high speed for 30 seconds. Add powdered sugar and salt. Beat until combined, scraping side of bowl occasionally. Beat in egg yolk and almond extract until combined. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour and the 1 cup toasted coconut.

Shape dough into two 8" long rolls. Brush rolls with egg white; roll in 1 1/2 cups coconut to coat. Wrap in waxed paper or plastic wrap and chill at least 4 hrs or until firm.

Cut rolls into 1/4" slices. Place slices 1" apart on an ungreased cookie sheet. Bake in a 375 degree oven for 10-12 min or until edges are lightly browned. Cool on cookie sheet for 1 min. Transfer the cookies to a wire rack; cool.
