Mussels - White Wine

Ingredients

  • 3 lbs of Mussels
  • 1 cup dry white wine
  • 3 Shallots - chopped very fine
  • 2 cloves garlic minced
  • 1/3 cup fresh parsley leaves - chopped
  • 1/2 tsp fresh thyme leaves
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 4 tablespoons unsalted butter
  • 1/4 cup leaves chopped very fine
  • 1 pint heavy whipping cream

Preparation

Step 1

In a large pot heat wine and butter
add shallots, garlic, celery leaves, parsley leaves, thyme, salt and pepper.
Simmer
scrub mussels to clean
remove an exposed beards (note removing beards will kill the mussels, so do not do it until you are ready to prepare the dish)
Rinse mussels well several times to remove any sand
bring sauce to a boil, add whipping cream
add the mussels.
Cover and cook, stirring frequently until mussels open in about 10 minutes. Discard any unopened mussels
Serve hot with fresh Italian bread for dipping in sauce.
