- 1 1/2 to 2 lbs. skinless, boneless chicken breasts

Step 1
Place chicken breasts in a large soup pot. Add enough cold water to cover the chicken. Put a lid on the pot and bring it to a rolling boil over high heat. This will take about 5 minutes or so. As soon as the water boils vigorously, take the pot off the heat. Let stand covered, until the chicken is cooked through. This will take about 15 minutes. Make plenty as these freeze and defrost well for meals later on.
