Ingredients

  • olive oil
  • 2 fennel bulbs sliced
  • 1 large yellow onion diced
  • 4 cups chicken or fish stock
  • 1 can crushed tomatoes
  • Peel of 1 orange cut into strips
  • 2 lbs cod cut into 1 1/2 inch cubes
  • 2 lbs shrimp peeled and deveined
  • 2 lbs mussels scrubbed and debearded
  • 1/4 teaspoon saffron threads
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup parsley

Preparation

Step 1

heat oil and add onion and fennel

add saffron, cayenne, tomatoes, broth and orange peel

reduce heat and allow to simmer for 15 minutes

add cod, shrimp and mussels and stir gently

cover and cook till mussels open

discard any mussels that haven’t opened

season with salt and pepper

serve in bowls, garnish with parsley and serve with crusty bread
