Lamb Kebabs

Ingredients
- Dipping sauce:
- 750 g minced lamb
- 1 small onion, finely chopped
- 1 tablespoon dried coriander or 2 tablespoons of fresh coriander
- 1 tablespoon ground cumin
- 1 teaspoon grated lemon rind
- salt to taste
- 250 g natural yoghurt
- 1 teaspoon chopped fresh mint

Preparation
Step 1
Place mince, onion, coriander, cumin, lemon rind and salt in a large mixing bowl and combine thoroughly.
Divide the mixture into eight equal portions and form into sausage shapes around large metal or wooden skewers.
Refrigerate until required.
Heat the grill, frypan or barbecue, brush with oil and cook kebabs for 12 minutes.
Serve with a bowl of yoghurt mixed with fresh mint for dipping.
HINT:
To test seasonings when you're preparing a mince mixture, fry a teaspoonful of the mixture and taste it. Adjust salt, pepper, herbs and spices, as desired.
