Curried Seafood Salad

Ingredients
- Salad:
- 1/2 pound shrimp, cooked and drained
- 1/2 cup crabmeat, cooked and drained
- 1 can (8 oz) pineapple tidbits, drained (reserving juice)
- 3-4 cups lettuce, washed, drained, and shredded
- 1/2 cup watercress, washed, drained, and shredded
- 3/4 cups salted peanuts
- Chutney Dressing:
- 2-3 tb liquid from pineapple
- 3/4 cup mayo
- 4 tb mango chutney, chopped
- 1 tb cider vinegar
- 3/4-1 tb curry powder

Preparation
Step 1
Salad:
1) Mix together the seafood and pineapple and chill thoroughly. In a serving bowl, toss together the lettuce and watercres. Chill.
2) To serve, arrange the seafood mix on the greens, sprinkling the peanuts overtop. Toss the greens and seafood with the chutney dressing just before serving.
Chutney Dressing:
1) In a small jar or bowl, thoroughly combine the pineapple liquid, mayo, chutney, vinegar, and curry powder. Chill. Serve with the seafood salad.
*Serve with Persian rice
