Crabmeat Casserole

  • 1 lb crabmeat
  • 6 hard cooked eggs
  • chopped parsley
  • 1 cup cream
  • 1/2 cup butter
  • dry mustard
  • 1 round tbsp flour
  • salt and pepper
  • 1 tsp oil
  • 1 tbsp vinegar



Step 1

Remove all cartilage. Place crabmeat in a large bowl. Chop egg whites and add to meat. Salt and pepper to taste and add a little chopped parsley. Mash the egg yolks; add a pinch of dry mustard, 1 tbsp vinegar and 1 tsp oil. Mix and add to crabmeat. Put flour, cream (milk), and butter in saucepan. Cook until thick. Pour while hot over crabmeat mixture. Mix and place in buttered casserole. Cover top with bread crumbs. Dot with butter and brown in hot 350 oven for approximately 20 minutes.
