I doubled the recipe for a pot luck lunch at work, but instead of the broccoli, I added chopped red bell peppers and a can of black beans, rinsed and drained. I did not have a spicy ranch dressing so I mixed 1/2 cup regular ranch dressing with 1/2 cup salsa. It was delicious and everybody liked it.

I had some extra boxes of the Classic Suddenly Salad in the cupboard and found this recipe as a means to use them up. It's fantastic. Per the suggestion, I added black beans, cooked chicken, and shredded cheese. An earlier reviewer is correct - leaving the corn frozen and adding it in at the end is the way to go. This recipe is very flavorful without being overwhelming.

I made this for a 4th of July picnic, but the store was out of the Suddenly Salad® classic pasta salad mix. The last box on the shelf was the Italian mix, so I grabbed it and followed the rest of the recipe. Luckily, I did not have spicy ranch. Regular ranch dressing was fine and the Italian spices in the salad mix added just the right zing! I also steamed the broccoli a bit because my family doesn't like is raw in salads. Everyone enjoyed it. I'm curious to see what it will taste like with the proper pasta salad mix!

  • 1 box Betty Crocker™ Suddenly Salad® classic pasta salad mix
  • 1 cup Green Giant™ Steamers™Niblets® frozen corn
  • 1/2 cup spicy ranch or regular ranch dressing
  • 1 tablespoon lime juice
  • 1 1/2 cups small broccoli florets
  • 1 cup grape tomatoes, halved
  • 4 medium green onions, sliced (1/4 cup)
  • 2 tablespoons chopped fresh cilantro
  • Tortilla chips, if desired

Empty Pasta mix into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally, adding corn during last 2 minutes of cooking.

Drain pasta and corn; rinse with cold water. Shake to drain well.

In medium bowl, stir together seasoning mix, dressing and lime juice. Stir in pasta with corn and remaining ingredients except tortilla chips. Serve salad with tortilla chips. Serve immediately, or refrigerate.
