Smoked Gouda-Chorizo Jalapeno Poppers

Ingredients
- 2 links Mexican chorizo, casings removed
- 1/2 pound smoked gouda cheese, shredded
- 1/4 cup red onion, finely chopped
- 1 egg
- 1/2 cup cream cheese
- 3 tablespoons sour cream
- 1 tablespoon hot sauce
- salt and pepper
- 18 large jalapeno peppers, stemmed, seeded and halved

Preparation
Step 1
1.Preheat oven to 375 (350 for convection).
2. Brown chorizo in skillet over med-high heat, about 8-10 minutes. Drain and place in large mixing bowl. Add cheese, red onion, egg, cream cheese, sour cream, hot sauce and salt and pepper (to taste).
3. Press into jalapeno halves and assemble on a parchment lined baking sheet. Bake until golden and bubbly, about 15 minutes.
NOTE: Recipe can be doubled and can actually make about 5 dozen poppers (30 jalapenos). Freeze on baking sheet and then store in ziplock freezer bag
