Ingredients

  • 2 1/2 tsp grated lime peel
  • 1/4 cup lime juice
  • 2 Tbsp soy sauce
  • 2 tsp water
  • 1 tsp sesame oil
  • 1/3 cup peanut butter
  • 2 1/2 tsp minced fresh ginger
  • 2 cloves garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 8 oz. uncooked whole wheat linguine
  • 2 cups fresh broccoli florets
  • 2 medium carrots, grated
  • 1 medium sweet red pepper, julienned
  • 2 green onions, chopped
  • 2 Tbsp minced fresh basil

Step 1

Place first 10 ingredients in a blender; cover and process until blended. Cook linguine according to package directions, adding broccoli the last 45 minutes; drain.

Transfer linguine ad broccoli to a large bowl. Add remaining ingredients. Add peanut butter mixture and toss to combine.
