Ingredients

  • 2 tbls unsalted butter
  • 3/4 cup chopped onion
  • 1 (16 oz) can tomatoes
  • 2 cups clam broth
  • 1 tbls fresh lemon juice
  • 1/2 tsp red pepper sauce
  • 1/4 tsp crushed dried thyme
  • 1 (7 oz) can crabmeat drained and flaked or 1/2 lb fresh crabmeat
  • 1/2 cup heavy cream
  • 1/4 cup dry sherry
  • 1/8 tsp monosodium, g
  • salt and pepper to taste

Preparation

Step 1

In medium saucepan, melt butter; saute onion til just tender. Add tomatoes, clam broth, lemon juice, pepper sauce, and thyme. Simmer for 10 minutes. Puree mixture in blender or food processor. Return to saucepan; add crabmeat, cream, monosodium glutamate, salt and pepper. Heat thoroughly. Do not boil. Ladle into individual bowls to serve.
