Ingredients

  • 1

    pound crabmeat (lump, white or claw)

  • 4

    green onions, chopped

  • 2

    Tbs fresh parsley, chopped

  • 2

    Tbs fresh cilantro, chopped

  • 1/4

    cup mayo

  • 2

    cups plain bread crumbs

  • 1

    egg

  • 4

    Tbs vegetable oil

  • 1

    tsp salt

  • 1

    tsp cayenne pepper

  • Dipping Sauce:

  • 1/4

    cup mayo

  • 1/4

    cup sour cream

  • 2

    tsp chipotle chilies, or minced jalapenos

  • 1

    garlic clove, minced

  • 2

    Tbs fresh cilantro, chopped

  • 1

    tsp fresh lime juice

Directions

Squeeze out all liquid from crab meat, one handful at a time. Gently mix crab meat, onions, parsley, cilantro, bread crumbs, mayo, salt and cayenne pepper. Carefully fold in egg with rubber spatula until mixture clings together. (Might need a 2nd egg if mixture is still falling apart). Form two inch thick round patties. Pan fry in hot vegetable oil on medium high heat until golden brown on both sides. Refrigerate for one hour to set. Mix all dipping sauce ingredients together. Cover and refrigerate for at least 30 minutes.
