Ingredients
- Fish:
- 3 lbs fresh cod fillets (thick ones)
- salt and pepper
- 1 cup & 2 tablespoons flour
- 1/4 teaspoon cayenne pepper
- vegetable oil
- 1 tablespoon baking powder
- 1 teaspoon lemon zest
- 2 extra large eggs
- Chips:
- 4 large baking potatoes, unpeeled
- 4 tablespoons olive oil
- 2 teaspoon minced garlic
- 1 1/2 teaspoon kosher salt
- 3/4 teaspoon pepper
- 1 teaspoon minced fresh rosemary

Step 1
Fish:
1. Lay fillets on cutting board. Sprinkle with s&p. Cut fillets in 1 1/2 and 3 inch pieces.
2. In a bowl, combine the flour, baking powder, zest, cayenne pepper, 1 1/2 tsp salt, 3/4 tsp pepper. Whisk in 1 cup of water and then the 2 eggs.
3. Pour 1/2 inch of oil in large frying pan and heat to 360. Dip each fillet in batter, allowing excess to drip. Place it very carefully into hot oil. Don't crowd.
4. Adjust the heat to say between 360-400. Cook each side 2-3 mins until lightly browned and cooked through. Put on plate w/paper towel. Sprinkle w/salt.
Chips:
1. Preheat oven to 400.
2. Scrub potatoes. Cut in 1/2 lengthwise, cut each 1/2 into thirds lengthwise.
3. Place potatoes on sheet pan w/olive oil, salt, garlic, pepper, and rosemary. Toss all ingrediants, making sure potatoes covered. Spread in a single layer w/one side down.
4. Bake 30-35 min, turning to other side after 20 mins. Sprinkle with salt.
