  • 1 lb. penne pasta (cooked)
  • 1/3 cup mayonnaise
  • 3 tbsp olive oil
  • 3 tbsp red wine vinegar
  • one 16 oz jar giardiniera (drained & chopped)
  • 1 cup diced provolone
  • 1 cup salami
  • 1/4 cup parsley
  • 1/4 cup basil
  • salt & pepper
