Italian Turkey Meatloaf

Ingredients

  • 1 large egg
  • 1/2 - 14 1/2 oz can diced tomatoes with Italian herbs, undrained
  • 1/2 cup finely chopped onion
  • 1/3 cup minced fresh parsley
  • 1/2 cup oats
  • 1/3 cup grated parmesan cheese
  • Salt and pepper
  • 5 Italian sausage links (or 1 lb) removed from casings (Tarantino's work very well)
  • 1/2 lb ground turkey
  • 1/3 cup prepared spaghetti sauce

Preparation

Step 1

1. Preheat oven to 375 degrees
2. In a large bowl, beat the egg. Stir in tomatoes, onion, parsley, oats, parmesan, and salt and pepper to taste.
3. Mix in Italian sausage and ground turkey by hand just until blended.
4. Form into a large meatloaf on a baking sheet patting to remove any air spaces (a jelly roll pan works very well)
5. Bake for 1 hour. Top with spaghetti sauce and continue baking for 15-30 minutes. Let stand for 10 minutes before serving.
