Chocolate Coconut Meringue Cake (Almond Joy)
- 2 sticks margarine
- 4 eggs
- 1 1/2 cup sugar
- 1 1/2 cup flour
- 1 1/2 tsp baking powder
- 2 tsp vanilla extract
- 4 oz. melted choc.
- whole almonds optional
- 5 egg whites for the meringue
- 1 cup sugar (meringue)
- 1 packet van. sugar(meringue)
- 2 cups shredded coconut(meringue)
- 1 Tbs. lemon juice
- 4 oz melted choc( for decoration)
Cake: grease 10x12 pan. Cream marg and sugar. Add eggs one at a time and vanilla ext. add rest of ingred through the melted choc. Bake for 20 min at 350
Meringue: Beat egg whites and slowly add sugars until stiff. Gently fold in coconut and lemon juice. Smear meringue on cake and return to oven until golden brown.
Decorate: Cut cake into portions(with cookie cutters,ovals,circles or squares). Place an almond that has been dipped in warm apricot jam in the center of each portion and drizzle with some more melted chocolate.
