Sausage and Seafood Gumbo

I love sausage and seafood. So, this recipe has all of my favorites. It is cooked in a 5 quart pressure cooker. My family loves my gumbo.

Ingredients

  • 1 tablespoon Cajun spices
  • 3 tablespoons oil or margarine/butter
  • 1 onion chopped
  • 1 bell pepper chopped
  • 2 stalks of celery cut into 1/4 inch slices
  • 2 U-shaped links of smoked sausage
  • 1 14 oz. can diced tomatoes, with juice
  • 1 pound fresh or frozen okra, cut into 1/4 inch slices
  • 1 pound raw shrimp, shelled and deveined
  • 1/2 teaspoon cayenne pepper
  • 3 cups chicken stock
  • 1/4 cup minced fresh parsley
  • 1 bay leaves
  • 4 cloves garlic, minced
  • 2 or 3 crab clusters or 1 pound of imitation crab meat
  • 2 tablespoons of hot sauce (more or less to taste)
  • cooked long grain white rice

Preparation

Step 1

1. In open pressure cooker, melt butter/oil and saute the onion, bell peppers, and celery until soft. Add sausage and brown, stirring.

2. Add okra, stock, hot sauce, tomatoes with their liquid, Cajun spice, bay leaf, cayenne pepper, parsley and garlic.

3. Close lid and bring to pressure. Cook at high pressure for 20 minutes. Allow pressure cooker to release pressure. If quick release spews juice, then release pressure slowly before opening lid.

4. Set pressure cooker to brown. Add shrimp and crab clusters or imitation crab meat and stir until shrimp turns pink (about 3 to 5 minutes).

5. Check seasoning and add salt and pepper if necessary. Serve over hot cooked long grain white rice.
