Ingredients

  • 1/2 cup chopped onion (optional)
  • 2 teaspoons finely-chopped garlic
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly-ground black pepper
  • 1 pound assorted mushrooms (such as crimini, portabellas, shiitake, oysters)
  • 1 1/2 tablespoons olive oil

Step 1

Trim mushroom stem ends (if using shiitake or oysters, remove stems); cut in slices or bite-sized pieces (makes 5 to 6 cups).

In a large skillet, over medium-high heat, heat oil until hot. Add onion; cook and stir until tender, about 3 minutes. Add garlic, salt, pepper and prepared mushrooms (except if using oysters); cook and stir until lightly browned and moisture evaporates, 5 to 7 minutes. Add oyster mushrooms, if using, cook until barely softened, about 1 minute.

This recipe yields 4 servings.
