Wild Rice And Mushroom Stuffing
- 3/4 cup wild rice
- 1/2 pound mushrooms chopped
- 1/2 cup onions chopped
- 2 tablespoons chopped pimento
- 1/2 teaspoon salt
- 1/4 teaspoon freshly-ground black pepper
- 1/4 cup sherry
- 1/4 cup brandy
Cook rice according to directions. Add vegetables and seasonings. Moisten with sherry and brandy.
Use as a stuffing for game hens or chicken, or as a casserole to accompany cold poultry or beef. If used as a casserole instead of a stuffing, bake at 350 degrees for about 45 minutes.
