Hearty Lamb Stew

Ingredients

  • 1 onion (chopped)
  • 2 cloves garlic (chopped)
  • 1 tbsp olive oil
  • 1/4 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1 butternut (peeled and cubed)
  • 3 carrots (peeled and chopped)
  • 800 g/1kg lamb knuckles (or stewing lamb or lamb chops cut in pieces)
  • 1 tin tomatoes
  • 1 tin kidney beans
  • salt and pepper

Step 1

1 Heat pot and add olive oil
2 ADD chopped onion, cumin, coriander, garlic, salt and pepper. Mix and leave to cook through
3 ADD Lamb and brown.
4 ADD carrots, butternut, tinned tomatoes and kidney beans. MIX all the ingredients well.
(TIP: I do the above in a large electric frying pan and find it works very well)
5 Preheat the oven to 180 degrees celsius
6 Place all the ingredients in a large casserole dish and place in the preheated oven for +/- 90 minutes (or until cooked)
7 Serve with white or brown rice
