Ingredients
- 1 1/4 pounds salmon fillets
- 1/2 teaspoon salt
- 1/2 teaspoon crushed red pepper flakes
- 3 tablespoons olive oil divided
- 4 cloves garlic minced
- 1 cup chopped tomatoes
- 1/2 cup white wine vinegar
- 3 tablespoons chopped fresh basil

Preparation
Step 1
Sprinkle salmon with salt and red pepper; drizzle with TWO tablespoons of the olive oil. Preheat grill to medium or oven to 375 degrees and coat grill with nonstick cooking spray or put salmon on plank to grill.
Whisk together garlic, tomatoes, vinegar, remaining olive oil and basil in small bowl; pour over salmon.
Grill, covered with grill lid, for four to six minutes on each side or until fish flakes easily or bake in oven for 35 minutes. Serve immediately.
