  • 1/4 cup olive oil
  • 1 small chopped onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 pound sliced white mushrooms
  • 1 chopped garlic clove
  • 2 cups water
  • 1/2 cup lentils
  • 1/4 cup goat cheese
  • 1 teaspoon curry powder
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon each salt and pepper
  • 2 tablespoons chopped fresh parsley

Step 1

1 Heat 1/4 cup olive oil in a saucepan over medium heat. Add 1 small chopped onion, 1/2 teaspoon salt. and 1/4 teaspoon pepper; cook until onion is translucent, about 5 minutes. Add 1/2 pound sliced white mushrooms and 1 chopped garlic clove; cook until mushrooms are soft, about 5 minutes.

2 Stir in 2 cups water and 1/2 cup lentils; simmer until lentils are very soft and have absorbed the water, about 40 minutes.

3 In a food processor, puree lentil mixture with 1/4 cup goat cheese, 1 teaspoon curry powder, 1/4 teaspoon chili powder, and 1/4 teaspoon each salt and pepper. Add 2 tablespoons chopped fresh parsley; pulse to combine. Serve at room temperature with grilled or toasted pita bread.
