Luscious Tandoori Lamb Chops

Ingredients

  • 8 lamb rib chops
  • 3/4 C Greek yogurt
  • 1/4 C heavy cream
  • 3 T lemon juice
  • One 3" piece of fresh minced ginger
  • 4 lge. cloves minced garlic
  • 1 T malt vinegar
  • 1 T garam masala
  • 1 T ground cumin
  • 1 T paprika
  • 1/2 t cayenne
  • 1/4 t ground mace
  • 1/4 t nutmeg
  • Salt
  • 2 T olive oil
  • 3 T melted butter

Step 1

Cut a few 1/4" deep slashes in each lamb chop. In large bowl, whisk yogurt with heavy cream, lemon juice, ginger, garlic, malt vinegar, garam masala, cumin, paprika, cayenne, mace, nutmeg & 1 t salt. Transfer chops to marinade; turn to coat, then cover & refrigerate overnite.
Add oil to marinade & toss with lamb chops. Remove chops & let stand at room temp. for 30 min.
Light grill. Season chops with salt & grill over mod-hi heat for 8 min., turning once, til well browned. Brush both sides of chops with melted butter & grill another 2 min. per side for med-rare.
