Ingredients
- 2 Tablespoons
- 4 thin slices opancetta or good quality ham, minced
- 2 garlic cloves, minced
- 1 35 ounce can of Italian plum tomatoes, undrained
- 1 teaspoon salt
- 3/4 teaspoon dried red pepper flakes
- 1 pound penne pasta
- 3/4 cup freshly grated Romano cheese
- 1/2 cup freshly grated Parmesan cheese
- 2 Tablespoons butter
- 6 tablespoons olive oil
- salt and pepper to taste

Preparation
Step 1
Heat oil in heavy skillt over medium heat. Add pancetta or ham and garlic and cook until fat is rendered and garlic is golden. Stir frequently.
Add tomatoes with liquid and salt and pepper and boil until thick whlie stirring to break up the tomatoes.
Cook pasta.
In another skillte, add butter and olive oil and red papper flakes.
Add freshly cooked sauce. Cook together about five minutes.
Pour over penne pasta, add the cheeses and toss to coat.
