Braised Crab with ginger and scallion

- Ingredients:
- 1 Dungeness crab (2lb)
- 8 stalks scallion
- 1 oz ginger
- Seasonings:
- 2 tablespoons soy sauce
- 2 tablespoons rice wine
- 1/2 teaspoon salt
- 1/2 teaspoon “HON-DASHI“
- 1/2 teaspoon white pepper

Preparation
Step 1
1. Open the crab, remove lungs and intestines, rinse then cut into 8 pcs. Crack the crab claws.
2. Cut the scallion into sections, slice the ginger.
3. Heat 3 tablespoons oil in wok, stir-fry ginger and 2/3 of scallion until fragrant. Add crab, keep frying over high heat till crab changes color, sprinkle seasoning, and 1 cup water, cover and cook until done, approximately 4-5 minutes.
4. Add rest of scallion and 1 tablespoon oil. Transfer to a platter and serve.
