A great way to use left over chicken or turkey. Makes the perfect sandwich for a picnic or side dish on a bed of lettuce for dinner. Enjoy!

Ingredients

  • 2/3 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 2 cups cooked chicken, diced
  • 2 red apples, washed, cored & diced
  • 2/3 cup celery, diced
  • 1/2 cup walnuts, chopped

Step 1

You will be using pre-cooked chicken for this salad.

In a small bowl, combine the mayonnaise, lemon juice, salt and pepper. Stir to combine.

Put the diced chicken, diced apples and celery and walnuts into a bowl and stir together. Add the dressing and toss to coat and refrigerate if not using for a couple hours. Eat the same day and serve over curled lettuce leaves for a colorful appealing presentation.

Season with salt and pepper to taste.
