Bruschetta'n Cheese Stuffed Chicken Breasts

- 1 Can ( 19 fl. oz./540 ml. ) Petite Cut Tomatoes With Garlic & Olive Oil, undrained
- 11/4 C. Shredded Mozzarella, divided
- 1/4 C. Fresh Basil, chopped
- 1 Pkg. ( 120 g ) Stove Top Stuffing Mix For Chicken
- 8 Sm. Boneless, Skinless Chicken Breasts
- 1/3 C. Kraft Signature Roasted Red Pepper With Parmesan Dressing

Preparation
Step 1
Preheat oven to 350. To prepare stuffing, combine tomatoes & liquid, 1/2 C. shredded mozzarella, basil & dry stuffing mix, stirring till just moistened. Put 2 chicken breast halves in a lg. resealable freezer bag. Pound till chicken is 1/4-in. thick. Repeat process for remaining chicken. Place chicken, smooth-side down on a cutting board. Spread with 1/8 of stuffing mixture. Roll chicken breasts, starting at narrow end as tightly as possible around stuffing mixture. Place in 13x9-in. baking pan with seam side down ( this allows chicken to hold together nicely. ) Pour dressing evenly over chicken & bake for 40 min. Sprinkle with remaining 3/4 c. cheese & bake 5 min. longer, or till cheese is melted & chicken is cooked through. Serve.
