Ingredients

  • 1/4 C olive oil
  • 1/2 # shrimp, peeled & deveined
  • 6-8 large garlic cloves
  • 1 large shallot, finely chopped
  • 1/2 t red pepper flakes
  • 1/2 C dry white wine
  • 1 t kosher salt or to taste
  • 1 T fresh lemon juice
  • 5 T unsalted butter
  • 3/4 # angel hair pasta
  • 1/2 C chopped parsley
  • 1/2 T black pepper or to taste

Step 1

Heat oil in large heavy skillet over moderately high heat till hot and almost smoking. Saute' shrimp, tuning once, till just cooked thru, about 2 mins & transfer w/ tongs or a slotted spoon to a large platter. Add garlic & shallot to oil remining in skillet along w/ red papper flakes, wine, salt & pepper & cook over high heat, stirring occasionally, 1-2 mins. Add lemon juice & butter to skillet, stirring till melted. Meanwhile, cook pasta according to package direction holding 1 C pasta-cooking water, then drain. Return the shrimp to the pan along w/ the parsley & cooked pasta & reserved pasta water. Stir well & adjust seasonings. Drizzle a bit more olive oil over the pasta & serve immediately.
