Pork and Mozzarella Stacks

Ingredients

  • 1/4 pound mozzarella cheese, thinly sliced (4 slices)
  • 8 pork cutlets, pounded thin from 1 pound pork tenderloin cut into eight slices
  • Kosher salt and table grind pepper to taste
  • 2 large eggs, beaten
  • 1/4 cup flour
  • 1/4 cup parmesan cheese
  • 3 cups of bread crumbs- from either a baguette or saltine crackers( finely ground)
  • 1/3 cup extra virgin olive oil

Preparation

Step 1

1.Preheat oven to 250-300.Cut eight slices from pork tenderloin. Pound each piece between wax paper until thin. Place mozzarella on 4 pork slices, top with the other pork slices.
2. Season cutlets with salt and pepper. Place the flour and eggs in a separate bowl. Combine parmesan and bread crumbs and place in a separate bowl.
3. Coat both sides ofpork stacks first in flour, then egg then breadcrumbs.
4.In a large skillet, heat the olive oil over medium high heat. Add the pork stacks and cook turning once until golden, about 4-6 minutes.Be careful not to burn.
5. Place pork stacks on a paper lined baking sheet and place in oven to keep warm and finish cooking , about 15 minutes

NOTE: delicious with orzo and peas
