Ingredients
- Lettuce or Napa Cabbage Leaves
- 1/4 C. Minced Shallots or Red Onion
- 3 Tbsp. White Balsamic or Wine Vinegar
- 3 Tbsp. Dry White Wine
- 2 Tbsp. Chopped Fresh Terragon
- 1 Tbsp. Extra-Virgin Olive Oil
- 1 tsp. Liquid Honey
- 1/4 tsp. Each Salt & Pepper
- 4 Skinless Salmon Fillets, 1-in. thick

Preparation
Step 1
Place steamer basket in shallow pan.; add water to come 1-in. from rack. Line with lettuce. Bring to a boil. In sm. bowl, stir shallots, vinegar, wine, terragon, oil, honey, salt & pepper; remove half & set aside. Brush remainder over salmon; arrange on lettuce. Reduce heat, cover & steam till salmon is slightly opaque ( approx. 8 min. ) Turn off heat; let stand till fish flakes easily when tested ( approx. 4 min.) Transfer to plates; drizzle with reserved balsamic mixture. Serve.
