Sausage & Pepper Grill

Ingredients
- 1 lb. Red Potatoes, quartered
- 5 Garlic Cloves ( do not peel )
- 1/4 tsp. Salt, divided
- 1/4 tsp. Freshly Ground Black Pepper, divided
- 1 Med. Red Onion, peeled & cut in half crosswise
- 4 Med. Red Bell Peppers, seeded & quartered
- 2 Med. Yellow Peppers, seeded & quartered
- 5 ( 3-oz. ) Italian Sausage Links
- 2 Tbsp. Fresh Italian Flat-Leaf Parsley, chopped
- 1 Tbsp. Fresh Oregano, minced

Step 1
Cut an 18x12-in. sheet of aluminum foil. Place potatoes & garlic in center of foil; sprinkle with 1/8 tsp. of the salt & 1/8 tsp. of the pepper. Fold foil over vegetables, tightly sealing edges. Lightly coat onion & bell peppers with cooking spray; sprinkle with the remaining 1/8 tsp. of the salt, & the remaining 1/8 tsp. of the pepper. Grill the foil potato pouch over direct med-heat till potatoes are tender ( 30 min. ), turning occasionally. Grill onion over direct med-heat 5 min. Turn onion; add bell peppers & sausage. Grill till vegetables are tender & sausage is done ( 10-15 min.), turning occasionally. Let sausage & vegetables rest till cool to the touch. Slice bell peppers into strips; coarsely chop onion. In a lg. bowl, combine bell peppers, onion, & potatoes. Squeeze garlic cloves to extract garlic pulp, parsley & oregano to pepper mixture, tossing well. Slice grilled sausage links into 1/2-in. thick slices & serve with bell pepper mixture. Serve.
