Ingredients
- 20 Med. Mushrooms
- 3 Tbsp. Butter
- 2 Tbsp. Onions, finely chopped
- 2 Tbsp. Red Peppers, finely chopped
- 14 Ritz Crackers, finely crushed ( approx. 1/2 C. crumbs )
- 2 Tbsp. Grated Parmesan
- 1/2 tsp. Italian Seasoning

Preparation
Step 1
Preheat oven to 400. Remove stems fom mushrooms. Finely chop enough of the stems to measure 1/4 C.; set aside. Cover & refrigerate remaining stems for another use. Melt butter in lg. skillet on med. heat. Add 1/4 C. chopped mushroom stems, the onions & peppers; cook & stir till vegetables are tender. Stir in cracker crumbs, grated cheese & italian seasonimg. Spoon crumb mixture evenly into mushroom caps. Place on ungreased baking sheet. Bake 15 min. or till heated through. Serve.
