Penne with Vodka Sauce

Ingredients

  • 1/2 cup olive oil
  • 1 small onion chopped
  • 2 cloves garlic chopped
  • 1 stalk celery chopped
  • 1 carrot chopped
  • 2 (32 oz) cans crushed tomatoes
  • 4 – 6 basil leaves
  • 2 dried bay leaves
  • Sea salt
  • Fresh ground pepper
  • 4 tbs butter
  • 1 cup vodka
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 pound penne

Step 1

Heat oil and add onion and garlic and sauté until soft and translucent (about 2 mins). Add celery andcarrot and season with salt and pepper. Saute until vegetables are soft, about 5 mins. Add tomatoes, basil and bay leaves. Cover and simmer until thick. Remove bay leave and taste for seasoning. If sauce tastes too acidic add unsalted butter, 1 tbs at a time.

Process sauce until smooth.

Simmer sauce and vodka in heavy skilled until mixture reduces by ¼, stirring often, about 20 mins. Stir in the cream and simmer over low heat until heated through. Stir in parmesan cheese until melted and weel blended.

Cook and drain pasta and coat with sauce.
