Ingredients

  • 1 2/3 cups once-sifted all-purpose flour
  • 1 tbsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup cut-up flaked or shredded cocunut
  • 2 ounces unsweetened chocolate
  • 3 tbsp. butter
  • 2/3 cup sugar
  • 1 egg, well beaten
  • 1 cup milk
  • 1 /s tsp. vanilla

Step 1

Grease loaf pan (4 1/2" x 8"); line with greased waxed paper. Preheat oven to 325 deg.

Sift together into bowl: flour, baking powder, baking soda and salt; mix in coconut.

Melt chocolate and butter together in top of double boiler. Remove from heat and stir in sugar.

Combine beaten egg, milk and vanilla; gradually stir into chocolate mixture.

Make a well in dry ingredients; add liquids and combine lightly but thoroughly. Do not beat.

Turn into prepared pan; spread evenly. Bake in preheated oven 50 to 55 minutes. Stand baked bread in its pan on cake rack for 15 minutes. Then turn out on rack, peel off paper and cool completely.

Best served 24 hours later, sliced and spread with butter.
