Ingredients

  • 1 tbs rosemary, crumbled or 2 tbs fresh, minced
  • 1/2 tsp pepper
  • 2 cloves garlic, minced
  • 2/3 cup seasoned bread crumbs
  • 4 six oz salmon steaks
  • 1 tbs plus 1 tsp olive oil

Preparation

Step 1

1. Preheat oven to 425 degrees. Combine first 4 ingredients in a mortar or bowl. Season with salt to taste and mash into a paste. Using a fork mix paste into breadcrumbs. Season both sides of steaks with salt to taste.

2. Arrange steaks in a lightly oiled baking dish. press equal amts of breadcrumb mix onto the top of each salmon steak and drizzle with oil.

3. Place in oven and roast 10-12 min or until fish is cooked throughout. Serve while hot.
