Marmalade Pie

Heat oven to 375 Line an 8 inch pie tin with the crust, poke a few holes in the bottom and bake for 20 minutes
- 1 pie shell
- 1/2 cup marmalade
- 1/2 cup heavy cream
- 1/2 cup almonds (ground)
- 1 egg
Silk Chocolate Truffles

Combine the Silk for Coffee and liqueur or rum in a small saucepan, and bring to a simmer
- Cocoa powder or finely grated chocolate (semisweet)
- 1 ⁄3 c Silk Coffee Creamer (any flavor)
- 1 ⁄2 lb Semisweet chocolate (melted, good quality )
- 2 T Orange liqueur or rum (optional)
Festive Eggnog Cake

For the cake: In a large mixing bowl combine all of the ingredients
- For the Cake:
- 2 cups flour
- 1-1/2 cups sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 3 eggs
- 1 teaspoon vanilla extract
- 1 cup eggnog
- 1/2 cup butter, softened
- For the Frosting:
- 1/4 cup flour
- 1/4 teaspoon salt
- 1 cup eggnog
- 2/3 cup butter, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
Pineapple-Coconut Cups

In a stainless steel or non reactive pan, add milk and corn starch
- 2 cups of 1% milk
- 1/4 corn starch
- 1 cup of C & H Sugar
- 3 egg yokes
- 1 20 oz can crushed pineapple
- 1 tsp vanilla extract
- 1 tbsp butter
- 2 cups bittersweet chocolate
- 1 tbsp Crisco shortening
- 1/2 cup toasted coconut - optional
- Dried Pineapple- optional

- 4 cups of peaches, sliced
- 2 cups of sugar, divided
- 8 tbsp of butter
- ½ cup water
- 1 ½ cups self rising flour

- 1/2 Cup Unsalted Butter (room temperature)
- 3 oz. Regular Cream Cheese (room temperature)

White Chocolate Cheesecake

Grandmother Paul’s Red Velvet Cake

- 1 teaspoon vanilla
- 1 cup buttermilk
- 1 teaspoon salt
- 2 1/2 cup cake flour
- 1/2 lb (2 sticks) butter
- 2 ounces red food coloring
- 2 tablespoons cocoa
- 2 cups sugar
- 2 eggs
- 1/2 teaspoon baking soda

Ambrosia Holiday Fruit Salad

In large mixing bowl combine sour cream with the whipped topping
- 1 cup sour cream
- 2 cups non-dairy whipped topping*
- 1 (20-ounce) can pineapple tidbits, well drained
- 2 (11-ounce) cans mandarin oranges, well drained
- 1 cup sweetened flaked coconut
- 2 cups miniature marshmallows
- 2 teaspoons fresh grated orange zest (optional)
