Crock Pot - Pumpkin Cheesecake

1. In a microwave safe bowl melt butter for 30 seconds
- 2 (8 oz.) packages cream cheese at room temperature
- 1 cup granulated sugar
- 2 eggs
- 2 teaspoons pumpkin pie spice
- 1 (15 oz) can pumpkin puree (not pumpkin pie filling)
- 2 cups gingersnap crumbs (plus a little extra for sprinkling on top if you so desire)
- 2 tablespoons butter
- Whipped cream

- 10 oz boneless skinless chicken breast
- 1/4 cup finely chopped onion
- 1 1/2 tsp toasted sesame oil
