- 2 cups cooked brown rice (wheat rice is great!)
- 1 box Purdue or Louis Rich chicken strips, cut into thirds
- 1/2 cup chopped celery, optional
- 1 can cream of broccoli soup
- 1 can cream of chicken soup
- 1 can cream of celery soup
- 1 1/4 cups mayonnaise
- 1 large onion, chopped
- 1/4 cup slivered almonds, optional
- 1/4 cup water chestnuts, optional
- crushed TownHouse crackers
- 1 stick butter

- 2 green peppers, diced
- 3 stalks celery, chopped
- cherry tomatoes, sliced in half lengthwise
- OPTIONAL: 1 jar small green olives (whole)
- 1 can black olives, sliced
- fresh mushrooms, sliced
- 1-1/2 tsp. salt
- 1 tsp. pepper
- 3/4 cup canola oil
- 1/2 cup rice vinegar
- 1/4 cup sugar - or to taste
- 1/2 tsp. garlic (OPTIONAL)
- 1 TBS. basil (OPTIONAL)
