Avocado Cornbread

HOW: Get your pan hot with some butter and cumin
- 1 cup stone ground cornmeal
- 1/2 cup all purpose flour
- 1 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cayenne pepper (or more if you like spicy - I do!)
- 2 teaspoons cumin
- 6 tablespoons butter
- 2 tablespoons honey
- 1 cup buttermilk
- 1 egg
- 1 ear corn cut from the cob (about 1 1/2 cup)
- 1 large ripe avocado in 1/2" cubes (about 1 1/2 cup)
- Juice from 1/2 lime (about 2 teaspoons)
Poached Eggs, Tasso Ham, Griddle Tomato and Cajun Hollandaise with English Muffins

Directions Heat the water and vinegar until simmering in a large high-sided frying pan
- 3 cups water
- 1 tablespoon white wine vinegar
- 4 eggs
- Kosher salt and freshly ground black pepper
- Canola oil, to coat
- 8 ounces tasso ham, sliced into 1/4-inch thick slices
- 4 plum or heirloom tomatoes, sliced in half crosswise
- 4 English muffins, split and toasted
- Cajun hollandaise, to top, recipe follows
Perfectly Flaky Pie Crust

Directions In a large bowl, mix together flour, salt, and sugar until well combined
- 1 3/4 cups all-purpose flour
- 2 teaspoons granulated sugar
- 3/4 teaspoon table salt
- 6 tablespoons cold unsalted butter, small dice
- 1/4 cup shortening
- 7 to 8 tablespoons ice water
Old-Fashioned Pumpkin Nut Loaf

Directions PREHEAT oven to 350° F
- 2 cups all-purpose flour
- 2 teaspoons pumpkin pie spice
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 2 large eggs
- 1 can (15 oz.) LIBBY'S® 100% Pure Pumpkin
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup NESTLÉ® CARNATION® Evaporated Milk
- 1 tablespoon vegetable oil
- 1/4 cup chopped nuts
Bananas Foster

Slice the bananas in half lengthwise and brush with the lemon juice
- 2 bananas, peeled
- 1 tablespoon fresh lemon juice
- 2 tablespoons unsalted butter
- 1/4 cup dark brown sugar
- 1/8 teaspoon ground cinnamon

- 1/4 cup white rum

South of the Border Corn

- 2 tablespoons hot water
- 2 tablespoons butter, melted
- 1 tablespoon minced fresh cilantro
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- Dash cayeene
- 4 ears fresh corn
Sweet Corn and Chicken Soup

Pour 10 cups water into a big stock pot and bring to a boil over high heat
- 1 leek, green parts too if you have 'em, sliced in half and thoroughly washed
- 1 carrot, chopped in half
- 3-inch hunk fresh ginger
- 1 teaspoon whole coriander seeds
- 1 teaspoon whole black peppercorns
- 2 chicken breasts on the bone, with skin
- 3 (14-ounce) cans creamed-style corn
- 2 chicken bouillon cubes, crumbled
- 3 tablespoons finely chopped ginger
- 4 scallions, chopped finely, white and green parts (reserve some green for final garnish)
- 1 teaspoon sesame oil
- 1/4 cup cornstarch
- 1/4 cup cold water
- 2 egg whites
- 1 teaspoon unseasoned rice vinegar
- Kosher salt and freshly ground black pepper
- Soy sauce, for serving
- Special equipment: cheesecloth

- 6 * 6 eggs
- 2 * 2 cups milk
- 2 * 2 cups flour
- 3/4 * 3/4 teaspoon salt
- 6 * 6 tablespoons butter
Cardamom Pistachio Ice Cream

Heat half & half and cardamom over low heat, until it comes to a simmer
- Makes 1.25 pints
- 2 teaspoons ground green cardamom
- 1.5 cups half & half
- 0.5 cups sugar
- 4 egg yolks
- 1 cup heavy cream
- 0.5 teaspoons rose water
- 2 tablespoons Dumante (pistachio liquer)
Lobster Mac and Cheese

- Ingredients
- Kosher salt
- Vegetable oil
- 1 pound cavatappi or elbow macaroni
- 1 quart milk
- 8 tablespoons (1 stick) unsalted butter, divided
- 1/2 cup all-purpose flour
- 12 ounces Gruyere cheese, grated (4 cups)
- 8 ounces extra-sharp Cheddar, grated (2 cups)
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon nutmeg
- 1 1/2 pounds cooked lobster meat
- 1 1/2 cups fresh white bread crumbs (5 slices, crusts removed)
