- 2 teaspoons salt, plus more to taste
- 1/2 teaspoon freshly ground pepper, plus more to taste
- 1 3- to 3 1/2-pound chicken, cut into 8 serving pieces
- 2 to 3 tablespoons olive oil
- 1 yam or sweet potato, peeled and cut into 1-inch pieces
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 bay leaf
- 1 tablespoon ground cumin
- 1 tablespoon ground cardamom
- 1 teaspoon ground cinnamon
- Generous pinch of saffron threads
- 1/2 cup raisins
- 1/2 cup chopped dried apricots
- 3 cups chicken broth
- 1 cup couscous
- 1/4 cup minced fresh mint
